4 slices of bacon, chopped
1/4 C white vinegar
8 oz. (6 C) lettuce
1/3 C chopped onion
2 t sugar
1/4 t salt
1/8 t pepper
3 hard-boiled eggs, chopped (optional)
Cook bacon until crisp.
Stir in vinegar and heat through.
Add lettuce and onions to the bacon mixture.
Sprinkle with sugar, salt, and pepper. Toss until lettuce is wilted.
*NOTE: we have made this recipe with any greens - spinach, salad mix, or head lettuce. You could even use them together. All are delicious. Also, you could add sun-dried tomatoes, roasted red peppers, or even sunflower seeds to add variety. Get creative!
