Asian Spinach Salad

Ingredients

  • 6 tbs. olive oil

  • 3 tbs. sugar

  • rice vinegar

  • 3 tbs. soy sauce

  • 2 tbs. olive oil

  • 3oz.package of Asian noodles from soup mix

  • ½ c. slivered almonds

  • 2 tbs. sesame seeds

  • 10 oz spinach

  • 1 bunch chopped green onions

Preparation

  1. Whisk olive oil, sugar, rice vinegar, and soy sauce in a small bowl. Add salt and pepper to taste

  2. Heat 2 tablespoons olive oil

  3. Add 1-3 oz. package of Asian noodles from soup mix (after coarsely breaking them) ½ c. slivered almonds, and 2 tbs. sesame seeds

  4. Stir until all are toasted and golden, about 8 minutes. Pour contents into a large bowl and cool

  5. Add 10 oz spinach and 1 bunch chopped green onions and toss with enough dressing to coat
